Triple Layer Brownie Ingredients

Brownie Base

  • 200g prunes (dates also work well)

  • 120g whole almonds

  • 40g rolled oats

  • 2 tbsp cocoa powder

  • 1 tbsp chia seeds

  • 1 tsp vanilla extract

  • Pinch of sea salt

  • 1–2 tbsp water (if needed)


Creamy Middle Layer

  • 180g natural cashew butter

  • 100g Greek yoghurt (or dairy-free alternative)

  • 2 tbsp maple syrup or honey

  • 1 tsp vanilla extract

  • Pinch of sea salt


Chocolate Topping

  • 120g dark chocolate (70% cocoa or higher)

  • 1 tbsp coconut oil


Optional Toppings

  • Cacao nibs

  • Freeze-dried raspberries

  • Chopped pistachios

  • Flaked sea salt

Method

  1. Line a 20cm square baking tin or container with baking paper, leaving a little overhang to help lift the bars out later.

  2. Begin with the brownie base. Add the prunes, almonds, oats, cocoa powder, chia seeds, vanilla and sea salt to a food processor. Blend until the mixture starts to come together. If it feels a little dry, add 1 tablespoon of water at a time until it forms a sticky dough.

  3. Tip the mixture into the prepared tin and press it down firmly into an even layer using the back of a spoon or the base of a glass. Place in the fridge while you prepare the filling.

  4. For the creamy layer, mix together the cashew butter, Greek yoghurt, maple syrup, vanilla and sea salt until completely smooth. Spread evenly over the chilled brownie base using a spatula.

  5. Return the tin to the fridge for 15–20 minutes so the middle layer firms up slightly.

  6. Meanwhile, gently melt the dark chocolate and coconut oil together in a heatproof bowl set over a pan of barely simmering water, or in short bursts in the microwave, stirring until smooth.

  7. Pour the melted chocolate over the chilled filling and gently tilt the tin so the chocolate covers the surface evenly.

  8. Finish with your chosen toppings, such as cacao nibs, freeze-dried raspberries, chopped pistachios or a light sprinkle of flaked sea salt.

  9. Chill in the fridge for at least 2 hours, or freeze for around 45 minutes until completely set.

  10. Lift the brownie slab from the tin using the baking paper, then slice into 12–16 bars with a sharp knife. For the neatest slices, warm the knife under hot water and wipe dry between each cut.

Booster: A light drizzle of extra melted chocolate over the fruit.

Why? Fresh berries add colour, fibre and natural sweetness, complementing the more vibrant energy many women experience around ovulation.

Swap: Swirl a teaspoon of almond butter through the creamy layer before chilling.

Booster: Finish with a light sprinkle of flaked sea salt.

Why? Almond butter adds extra richness and staying power, which can feel particularly comforting during the luteal phase when appetite cravings often shift.

Cook Once Tip

Make a double batch of triple-layer brownie mixture and freeze half. The bars thaw in around 15–20 minutes, making them a perfect grab-and-go option whenever you need something sweet without reaching for ultra-processed treats.


Storage

  • Fridge: Store in an airtight container for up to 5 days.

  • Freezer: Freeze for up to 3 months. Separate layers with baking paper to prevent sticking.
